Thirdly, giving all serious lovers of regional Neapolitan cuisine the opportunity to experience the very best ingredients and produce Italy and in particular Naples has to offer.
Johnny Di Francesco is the first Australian ever trained in Naples to the Associazione Verace Pizza Napoletana rules. He has become the association’s Australasian Principal, travelling the region ensuring pizzeria’s are of the highest standard and meet the principles of the association before officially inducting them into the Association.
Appearing regularly on the ‘Regional Italian Cuisine’ program and having appeared at the famous Caesars Palace during the Las Vegas International Pizza Expo, Johnny also regularly holds seasonal Masterclasses – fast becoming recognised as Melbourne’s Mr. Pizza!
Gradi’s menu showcases the food of Naples. The region is universally recognized as the home of the wood-fire pizza and the original being named after Queen Margherita of Italy. Naples’ Mediterranean coastal location means that wood-fire pizza and seafood are always the star.
When Johnny’s family migrated from Naples in the 50’s, little did they dream that Johnny would spend his life bringing the food of Naples back to Australia.
Gradi at Crown’s sommeliers have put together a wine list that features some of Australia’s well-known and some boutiique producers, International award winning and are forever encouraging our customer’s experience by introducing them to some of the most interesting wines we have to offer. To celebrate Gradi at Crown’s grand opening at the Melbourne Casino, Our sommelier has prepared full bodied 2012 Antonio Caggiano Tauri–Aglianico especially for the restaurant. It can be ordered by the bottle and is a great example of what Italy has to offer. It is also available at our sister restaurant 400 Gradi.
